you know those people who are just chill, and laid back and just cool? i am not that.
i have a better chance of being oprah freaking winfrey than that.
my friend helen is like that.
and she’s moving away. which is weird, because i haven’t really processed it yet. you know when something sad is happening but it hasn’t caught up with you yet and then one day you spill milk on the counter and have a full fledge ugly cry breakdown?
this will probably be something like that. until then, i’m living blissfully in my version of neverneverland – denial.
she’s my person at work – in that annoying meredith and christina grey’s anatomy kind of way.
and she’s leaving me.
she’s actually still going to be working with me, albeit from across the country, and i don’t even see her that often, but it’s just sort of the knowing she’s there thing. like right there in case i need a walk around the block or a solid vent session or my boyfriend and i broke up and there’s nowhere to hide because we have this stupid open workspace and i just need to cry.
she’s my divide and conquer, don’t get your feathers in a bunch, i’ve got your back, vagabond kind of friend. she’s my xanax, basically.
oh and did i mention the best part? she’s british. i wish i could at least fake a british accent, would probably have at least three more friends at this point.
she and i don’t always agree, and we’ve both irked each other enough times but her heart is just as big as the moon. and i miss her already.
think i just left neverneverland.
so let’s talk about bacon. bacon makes everything better and it’s more fitting for this post then i can tell you.
these are easy apps that are the first things to go. i despise party apps that you can’t eat standing up. we all know how coordinated i am after all.
bacon wrapped dates are classic – but i love the crunch of the walnuts and the smooth awesomeness the goat cheese lends. it’s heaven.
these photos are coyote ugly but if you knew the back story – well, they’d actually look pretty good to you.

- 1 lb center cut bacon, halved
- 8 oz pitted dates
- 4 oz goat cheese
- 4 oz whole walnuts
- about 30 toothpicks
- preheat oven to 400.
- line a cookie sheet with aluminum foil.
- halve the dates, and load with bacon and goat cheese.
- wrap half a slice of bacon around the walnut and goat cheese and secure with a toothpick.
- rinse and repeat, about 30 times.
- pop in oven for 20 – 25 minutes.
- bacon heaven.
