it’s here, it’s HERE!
i am SO excited.
no not cinco de mayo. or the return of 24. and no, definitely not the reemergence of miley cyrus.
i nearly died (but for real) through two polar vortexes, survived Q1 at work, muddled through a non existent spring, and haven’t seen the sun since….i don’t even know. october?
no vacations. no staycations. i know, first world problems. but it’s here, it’s here!
the time of year filled with the happiest things (except christmas of course, i live and die for christmas). lake season, vacations, showers – bridal and baby, graduations, parties, races, patio drinking. la la la.
it’s going to be nuts. and to be honest, i’m going to be broke by the end of it. and there will be moments when i’m deciding which calphalon pan to buy for a bridal shower and if i should get reusable diapers or the organic bottles for a baby shower, when i’ll just think – will it be my turn? (ugh, i know – but its true).
not that it’s their fault if it isn’t. it’s just, you can’t help but wonder sometimes if someone’s going to mark that saturday in may for your day. will i have those horribly corny engagement photos and make my friends pretend to be interested while i explain how my bridesmaids dresses are totally plum, not purple and my future sister in law is SUCH a pain because she wanted lilac. and don’t get me started on the gifts. please oh please let me walk through williams sonoma with one of those little guns. it’s like my nirvana.
if it doesn’t happen, i might have to pull a carrie bradshaw and throw myself a shower – registry and all (sur la table, williams sonoma and crate and barrel if you please).
anywho. i’m so happy for these people. i mean it’s a pretty incredible thing – that out of everyone else in the world- they’ve chosen each other. or they’ve brought this tiny human into the world. or they’ve run 26.2 miles when a year ago they hadn’t run 5. or this little boy who had trouble reading in 1st grade has blossomed into this enviable sophisticated educated college graduate.
and how lucky am i to share it with them?
so chicken salad bites. they’re simple. they’re cute (pertinent). they’re perfect for occasions like showers, graduation parties, etc etc etc. they’re finger food. i literally almost just called them finger foodgasm. that just sounds wrong.
i mean – let’s call a spade a spade. a shower isn’t quite a bustling party. it’s not thrilling to watch someone open up tupperware – so be kind and make the food delicious and keep the champagne flowing,
confession time. i should’ve picked purple grapes for a pop of color. but green was on saleee. and hello – see above – going to be broke soon.
you really can switch these up too. do walnuts instead of almonds. mandarin oranges instead of grapes. the world is your oyster. just don’t mess with the fresh dill. it’s the jam.
also – happy cinch de mayo sweet pea – go make yourself a margarita, you deserve it!
- 3 chicken breasts, cooked and diced (about 4 cups)
- 1 cup sliced almonds
- 1 cup green grapes, halved
- 3 tbl red wine vinegar
- 1 tbl fresh dill
- 2/3 cup fat free mayo
- 2 tsp salt
- 1 tsp pepper
- 1/2 bunch of green onion, chopped
- 2 ribs celery, chopped
- 1 head butter lettuce
- on stovetop, add chicken breasts to pan and fill with enough water to cover chicken breasts. bring to a boil, then lower heat so it simmers.
- leave for 30 minutes until cooked thoroughly.
- chop chicken breasts, celery, green onion, fresh dill and grapes and add to bowl.
- add red wine vinegar, salt, pepper and mayo to mixture and stir.
- tear off butter lettuce pieces and spoon chicken salad bites.
- refrigerate for about 30 minutes and serve!
