i am just a bowl of fun today.
about as much fun as a vacation to the dentist while you have bronchitis.
which i did. yesterday.
i know, (looking at all of you) i should have cancelled. but i already rescheduled once and i’m really big on dental hygiene. like you dont even wanna know. it’s weird.
let’s just say when i tell my sister i’m going to brush my teeth, she looks at me, rolls her eyes and goes “guess we’ll see you in about twenty minutes then.”
what? “you don’t have to floss all your teeth, just the ones you want to keep.”
im annoyed with me too. dont leave meeeeee.
wait. so my dentist is the bomb. nicest guy ever. cute too. married, mom – chill.
i, of course, me being me – get the brand new hygienist. she dropped the toothbrush thing on the ground. which was already leaking all over me. and this is after she kept forgetting different things she needed, and nearly broke the thing you need to take an x-ray with. it took an eternity. but don’t worry about me, i only have lungs filled with bronch-asaurus which makes me feel like i am breathing underwater. but i’ll just sit here, not coughing, with the sucking thing dangling out of my mouth, while a fire rages inside of me. take your time.
i should’ve just asked her for the leaky device, some cool water would’ve been nice.
bless her heart. we’ve all been there. i’m kind of glad it was me, i’m used to running into doors and nearly face planting on treadmills. i can take it all in stride, or er – maybe not.
i made this soup on sunday – as if my body knew i would be craving anything warm and soothing. it’s like chicken soup for the soul, literally. which, do you guys remember those books? i had a bunch of them, they were so sad. why did we do that to ourselves? we definitely weren’t the smartest bunch – i mean we raised giga pets and played skip it for fun.
this soup is amaze. my parents were in town and brought fresh tomatoes from their garden. so i threw those in and a bunch of other veggies. i wanted some protein in there so i added quinoa.
and if you live in chicago and walked through the ice bucket challenge she decided to grant us with today, you need some of this in your kitchen.
i feel about soups the same way i feel about salads- make ’em healthy. they’re delicious, and if you’re eating them you’re probably trying to be healthy so don’t spoil it. you can make a delicious soup without cream and cheese. add spice. or cumin. heck, even a beer. ok, maybe it’s not that much healthier but it’s cooler.
it’s just mmm mmm good.
- 1/2 yellow onion, diced
- 1 clove garlic
- 4 stalks celery, diced
- 6 carrots, diced (baby will work too) – about 2 cups
- 2 chicken breasts, cook and diced (use a rotisserie chicken to skip a step)
- 1/2 tsp smoked paprika
- 3 bay leaves
- 1 tomato, diced
- 1/4 tsp cayenne pepper
- 1/2 c quinoa, rinsed
- 6 cups low-sodium chicken broth
- kosher salt and pepper to taste
- add everything to the crockpot. stir.
- set to low for about 8 hours.
- pour yourself a glass of wine, and let the aroma fill the room.
