i found it.
you know that feeling? when you lose something you really really can’t lose? and your heart drops and your breath quickens and you start making deals with the universe if you could just find this one thing? like, i can spill quinoa every day for the rest of my life. and forget about that promotion i’ve been asking for. i dont really need that new place. you can have all of my shoes and i’ll just walk barefoot the rest of my life. i won’t ask for anything ever again. if you just make this one thing un-lost (i know, that’s not a word) then i won’t ask for anything ever again.
i knew right where it was. in the lefthand drawer of the dresser. the very top, tiny one. i took the drawer out, took everything out of the drawer and shook it out. i ransacked my apartment like a bull in a china shop. and then i thought – what about that right drawer? and hope floats up from my gut to your heart with butterflies following behind. i pulled the drawer out slowly – all the way out. and there, behind the drawer, it sat.
sigh.of.relief. anyway, if you lost something i do hope you find it soon and join me in this happy dance that’s happening around my living room.
and then do yourself a favor and make this quinoa bowl. you know. i. love. quinoa. bowls. they’re versatile, and healthy, and delicious. this one is a copycat. i work right next to a freshii and their bowls and wraps are the jam. my healthy, fit friend kelly makes what is already a healthy lunch option even healthier. these bowls are delicious, but they’re simple and it’s worth making them at home and saving yourself the $50 you’d spend on them and use it on happy hour instead (i’m really good with finances). this one is their pangoa bowl.
so here are the healthy swaps – freshii typically uses brown rice as the base but you can swap in spinach, kale or quinoa. so what kelly does, and i’m not making this up is she asks for a base of ¼ quinoa and ¾ spinach. she’s ridiculous but she can also kick butt at mini iron mans so i’ll blindly follow her wherever she goes. then obviously, as i typically do i skip the cheese here.
the dressing makes this whole thing. they call it a ‘fiery barbeque sauce’ so i started playing with different things in my kitchen. i grabbed my rideordie bbq sauce, sweet baby ray’s, and my ican’tlivewithoutyou sriracha and married them. about 1 part sriracha to 3 parts bbq sauce. it’s a dream. i would use a sweeter bbq sauce if you can – it really adds a new level to the bbq sauce.
you can always top with any kind of meat you like, but with this bowl i don’t miss it. it’s loaded with protein and full of flavor.
quinoa bowl away!
- 1/2 cup quinoa, cooked and drained
- 1 1/2 Spinach
- 1/3 cup black beans
- 1/3 cup corn corn
- 1/4 cup cherry tomatoes, halved
- 1 avocado, cut in wedges
- 1 lime, quartered
- 3 parts sweet baby ray’s
- 1 part sriracha
- add quinoa, then spinach, black beans, corn and toss
- top with cherry tomatoes, lime, avocado
- in a small bowl – combine barbeque sauce with sriracha
- top with dressing
