i’m on a kale kick.
don’t close out of this tab. i know, it’s kale. which is like the birkenstocks of recipes. if birkenstocks were healthy.
soooo moderation. have kale with your fried chicken.
and seriously you guys, this salad is 100% madness. and 100% not my idea. i went out to public house chicago a couple weeks back for brunch with my friends (define brunch: an entire bottle of champagne with a side of salad) and ordered this, and ohemmgeee. i wanted to be healthy, but with this salad – i didn’t miss the burgers and fries. it tasted awesome, i felt awesome….probably maybe partly because of the entire bottle of champagne but that’s besides the point.
so i decided to recreate it in my little humble abode. it still tastes awesome.
i know kale can be a little intimidating – it’s definitely a different texture. it’s earthy, hearty lettuce – full of oh so good for you things like…..i don’t know? vitamins and things. the quinoa softens it. the cheese makes it delectable. and the corn and tomatoes and red onions are little rainbows of flavor.
just make it already.
- 4 cups kale kale
- 1/4 cup quinoa, cooked
- about 7 cherry tomatoes, halved
- 1/4 red onion, sliced
- 1 ear of corn, cooked, taken off cob
- 1 zucchini, chopped
- about 1/3 cup feta
- balsamic vinegar to taste
- olive oil to taste
- salt and pepper to taste
- toss first seven ingredients in bowl.
- top with feta, balsamic vinegar, olive oil and salt/pepper to taste.
