Mediterranean Dip

well hey there august, aren’t you a sneaky little bugger?

i feel like july just irish goodbye-d on me without even having a drink at my party. i’ve had tinder dates that have lasted longer. i swear.

i feel excited. i don’t know why but i feel like something exciting is just around the corner. things are happening. pieces are moving.

i just said “feelings” three times within 1 ¾ sentences. i’ll pour you a glass of wine.

there’s something about august though. the back to school supply lists are out, those last beach vacations are taken, that suns starts to burn a little earlier in the evening. august instills an urgency in people that makes them squeeze the orange of summer a little harder, just to make sure they get all the juice out. you decide to drink that bottle of rose on the rooftop instead of cleaning out that closet. it’s just too perfect a night to spend inside and not under a cotton candy sky. and you know it’s fleeting. you can’t procrastinate summer, mother nature runs on her own schedule.

i’ve neglected this place a little, but with working so much, it’s hard to spend the little time i do have outside of work in front of a screen. i have been cooking a.lot. and loving it.  like this dip. this dip screams greece to me. i think it’s because i have wanderlust. because people are at yacht week right now. and one of my friends is in croatia. and it’s an itch i have to scratch. trips are my penicillin. i start to feel anxious and like i’m suffocating when i don’t have one on the books. if i don’t buy a plane ticket in the next few weeks to somewhere. i might have to go on vacation by myself. for the last several years, i’ve always had a trip planned for the fall. i have a couple small trips – but i need an adventure. to anywhere.

i’m running out of travel buddies. that is the thing about not being married in your 20s. so i just keep on swiping.

and dipping. i’ve been on a hummus kick recently, and guys, it’s like a gateway drug. which is how this dip was born.

i used to be an anti-dip person. i didn’t grow up with them. then i  moved to chicago, and suddenly everyone was dipping. buffalo chicken dip, taco dip, that amazing sausage and velvetta cheese dip. they’re all so horribly unhealthy though. so this is a nice one to bring with pita chips and veggies. it’s filling and it’s not loaded with fake yellow cheese.

it’s still bikini season after all. here’s to you, august.

Mediterranean Dip
Ingredients
  • 10 ounces hummus
  • 1 cup nonfat Greek yogurt
  • 1 clove garlic, finely minced
  • 2 tsp chopped fresh dill
  • juice from 1/2 lemon
  • kosher salt, fresh ground pepper to taste (about 1/2 tsp)
  • 1/4 red onion, minced (about 2 tbls)
  • 1 cucumber, diced
  • 1 cup tomato, diced
  • 1/3 cup crumbled feta cheese
  • 1/4 cup black or kalamata olives, sliced
Instructions
  1. in a small bowl, combine salt, pepper, greek yogurt, garlic, dill, lemon
  2. in a small dish, spread the hummus with a spoon.
  3. top with yogurt mixture
  4. top with cucumbers, olives, tomatoes, red onion and feta cheese. and a little sprinkle of dill.
