i’m going to be corny here for a minute. in exchange, there’s booze on the other end.
recently i’ve been reminded how awesome everyone is in my life. a couple of months ago i was reminded of how when life breaks your heart with an unexpected disaster, the clear lake crew puts their arms around you in a big ole bear hug and they won’t let go until their sure you can stand on your own. they just show up without being asked, without expecting anything in return and they help you put the pieces back together the best they can. and even if they can’t fix it, their love is like a glue that starts to hold the important things in place and gives you a strength of knowing you’re not doing this alone. they just pitch in and when you look back, you can’t believe their selflessness. and they bring muffins. and enough of those hugs, the really good kind that transfers love from them to you. that’s just the clear lake way.
and then everyone rallied around me for this silly recipe contest. everyone was just so friggin kind and supportive sharing it on their social media and emailing it to friends and coworkers. it was a silly little contest, but it meant a lot to me. i am so in love with this sassy eats happy place i’ve created and my fun little invisible internet friends. the support told me i shouldn’t quit it (which i contemplate every week). plus, we’ve talked about how i have zero dumb luck, i mean i wouldn’t win the lottery if you gave me the winning numbers and drove me to the store to buy a ticket. your votes made my heart all warm and fuzzy.
my lighter bananas breakfast strata went from 269th to 7th in SIX DAYS. all because of you. and that’s freaking amazing. it blows my mind. 7th place felt like 1st to me.
so to thank you – i made you a cocktail. plus it’s OSCAR SUNDAY (in oprah’s “everyone gets a car” voice), which just requires bubbly goodness. and it’s sunday, so duh – cocktails required.
pomegranate mint sparkler. i love when i make something and i get to make up a name for it. i mean what girl hasn’t wanted to know who the lucky person is that gets to decide that opi color should be lincoln park after dark? so pomegranate mint sparkler (because i love sparklers – the 4th of july ones, the diamond ones, the bubbly ones) it is.
- 1/4 cup brandy
- 1/4 cup pomegranate juice
- 2 cups champagne
- 1 tsp mint, torn to pieces
- pour pomegranate juice, brandy and champagne in glass.
- top with mint blueberries and mint to taste
