you know that vacation glow you bask in when you return from a really relaxing getaway?
you’re sunkissed and bronzed. you swear you can still feel the buzzing effects of those mojitos and sunsets on the beach.
so when i arrived home from a mini girls trip to florida, i was all zen and namaste about life. (and yes, i’ll be telling you all about this girl’s trip. so many stories. grandma was involved. so obviously.)
i had been up since 3:30 that morning and i was going to do what i never do. crawl into bed for one beautiful hour and pretend like reality was this distant neverneverland.
and then i walked into my apartment.
and there was a hole in my ceiling.
a hole. in the ceiling. of my bathroom.
and that’s when this week started kicking my ass. actually it started when i first felt like i was going to die from some incurable disease in the airport that morning and i was almost in tears. then it continued when there was a freaking hole in my ceiling. all for a rustic shabby chic look, but the rust colored water dripping from the ceiling is a little too far.
so this is all a long winded way of saying, i’ve been away. but i missed you. even when i was on the beach with a handsome man serving me drinks. that may have been a lie. he was pretty cute. but i’m pretty sure i did. and being in the kitchen. which has a fully in tact ceiling.
so while my maintenance man, jose, bless his heart, was working away on the old skylight i got to cookin.
and i made you kale.
i know. is this kind of how you’d feel if your boyfriend cheated on you and brought you home a blender as an apology present?
it shouldn’t be. i mean it’s not tiffanys, but it’s not like i just made you toast. now that would be a slap in the face and youfor sure shouldn’t forgive me. that would be like said cheating boyfriend buying you socks. at least you can make pina coladas with a blender.

and since then, i’ve been courting kale. (enough of the dating jokes, i knowww already).
but i went over to my friend cory’s and she made a kale salad. and i for sure didn’t tell her about this because i strive to be anything but a picky eater, but i was a little weary. just a little. and it was actually good!
unlike the time when i made kale chips as a healthy alternative to potato chips. which taste nothing alike. it’s like saying, carrots are like cookies because they’re both crunchy. i’ll just perpetually be 3 pounds heavier than i want to be and keep my barbecue potato chips, thank you very much. and i’ll continue complaining about the extra three pounds. i want to have my cake and eat it too.
this salad is really good though. and i’m so glad i added some heat to the dressing so it’s not a blah vinaigrette. it adds some zap to the sweetness of the honey in the dressing.
and the pine nuts. i just go nuts for them (bet you wish i had stayed with the dating ones now, huh?) – don’t skip toasting them. it’s worth the test in patience.
- 1 large bunch of kale
- 1 tbl lemon juice
- 1/2 avocado, diced
- 1/3 cup toasted pine nuts
- 1/2 cup cherry tomatoes, halved
- 1 Tbs extra virgin olive oil
- 1 tsp honey
- 1/4 tsp salt, pepper
- 1 dash cayenne pepper
- tear kale off stem and give it a rough chop. place in bowl.
- in a skillet over medium low heat, add toasted pine nuts. toast for 3-4 minutes until slightly golden.
- Add toasted pine nuts, avocado and cherry tomatoes to salad.
- in a small bowl, combine the EVOO, honey, salt, lemon juice, pepper and cayenne. mix together and add to dressing.
- toss and serve!
