we all know baking ain’t my thing.
you gotta know your faults after all. baking is an exact science, with measuring spoons and teaspoons and melted butter vs softened butter. blah blah blah. cooking is different. i just want to throw some meat in some oil and hear it sizzle. that’s not science, it’s magic.
besides, i put all my measuring cups in the dishwasher and apparently i’m not supposed to, so all the little measurement signs have come off. so i just guess if it’s the 1/4 cup or 1/3 cup, say a little prayer and pour. see – i’m an awful baker.
it is a serious debate and people fall squarely in one category or another. they’re a cook or a baker.
soup – a cook’s delight. it has so many variables, you just throw it into a pot, taste as you go, add a little this and a little that and then you’ll find that it’s just right. and then your entire apartment fills up with the aroma and you just dont know if there’s a more inviting place to be then right there where you are….
anyway, i totally get that soup can be intimidating, but i promise this one is easy. plus it’s healthy (minus the brewski) – white chicken chili. and it’s healthy – there’s nothing bad in it but it’s still flavorful and filling.
so here’s what you gotta do.
1. boil water (adding some pinches of salt)
2. toss in two chicken breasts – make sure they’re nice and plump – size c cup
3. reduce heat so it is just boiling slightly.
Quick trick: place a wooden spoon over the pot and it prevents it from boiling! GENIUS, you say? You are welcome. i accept gifts from Tiffany’s and i’m registered at williams sonoma.
4. wait 20 minutes. and when you slice a piece open, it should be white (no translucent/pink)
ok, here is everything you need: cooked chicken, cumin, great northern beans, red pepper, green chiles, chicken broth and a beer (i prefer heineken because it gives a great flavor, but any beer will do – except light beer, that’s for amateurs, not cooking)
Throw some oil into a skillet and toss in onion. when they are sparkly white, they’re done. toss frequently so they don’t burn.
add in the can of green chiles.
i’m still getting used to stopping auto pilot to take pictures soooo just use your imagination. people are underutilizing their imaginations these days, so really i’m doing you a favor, you’re welcome.
add the two cans of chicken broth, the beer, cut up chicken, onions and green chiles. add a tablespoon of cumin, a teaspoon of cayenne (depending on how much spice you like in your life).
now sit back, pop open a beer and enjoy as you’re enveloped in a aroma of deliciousness.
- 2 chicken breasts (cooked)
- 2 tbls cumin
- 2 tsp crushed red pepper
- 1 beer (i prefer heineken or a wheat beer)
- 1 16 oz can great northern beans
- 1 4.5 oz can chopped green chiles
- boil water in medium sauce pan. add chicken breasts, reduce to simmer and cook thorough.
- chop chicken breasts.
- add all above ingredients.
- bring to boil for about 10 minutes, reduce to simmer.
