i needed something happy. so i made these. for you. (but really for me. well the dough for me, the cookies for you). and what’s happier than rainbow sprinkles and sugar?
i don’t like cake. have i told you that? i’m an old woman, so i’ve started repeating myself. i also have 3 gray hairs.
anyway. i don’t like the texture of cake. it’s just too much sugar at once. it’s like botox. a little is so great and wonderful, but too much and you end up looking like joan rivers going down a roller coaster. not good ladies and gents.
so these are the perfect little marriage of cake batter flavor without being overdone.
i was feeling very blah and was thinking too much and that’s all pretty vague but you can’t be mad because in the end i made you cookies.
it’s just – you know when you’re disappointed by a situation but it’s partly your fault? and it’s sooo annoying. because you yourself are telling yourself “i told you so.”
and there’s this little voice in your head saying, “you made your bed and now you have to lie in it.” but you don’t want to lie in it. you want to be in that other bed that you imagined. and get your mind outta the gutter, i’m talking metaphor beds, not real beds. this is deep talk.
so really. i was pouting.
and so i cook. it clears my head. pour some wine. turn up the music. put your phone away. and just make the magic in the kitchen.
these are one of the little treasures i cooked up.
they’re so easy it’s embarrassing. like, it’s not even a recipe really. it involves cake in a box. here i come top chef season 13.
but they’re happy. and fun. and they’ll brighten someones day. and you’re allowed to brighten your own day.
- 1 box funfetti cake mix
- 1 tsp baking powder
- 2 eggs
- 1/2 cup vegetable oil
- 1/2 teaspoon vanilla extract
- preheat oven to 350 degrees.
- in a large bowl, mix together the cake mix and baking powder.
- in a small bowl, mix together the eggs, oil and vanilla.
- and the egg mixture to the cake mixture and stir to combine.
- drop by spoonfuls onto a cookie sheet.
- bake for 8 to 10 minutes.
